Ranch Style Beans
You'll Need:
8 strips thick cut bacon
1 sweet onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 serrano, finely diced
Handful of cilantro, rough chopped
2 cans beans, drained (I use pinto and northern white beans)
3 1/2 cups chicken stock
1 tablespoon chili powder
1 teaspoon cumin
2 teaspoons dried oregano
1/4 teaspoon red pepper flakes
To get started:
Dice bacon, then fry in a deep, heavy skillet.
When crisp, remove bacon from pan, and set aside.
Saute onion, bell pepper, garlic, and Serrano in bacon fat.
Add in the beans and cilantro and mix well.
Slowly pour in the chicken stock, stirring well.
Add in seasonings and stir.
Bring to boil, then turn heat down to low.
Let simmer about one hour, until sauce reduces and thickens. Add bacon and stir. Allow to simmer about 5 minutes.
Top with diced onions, bell pepper, cilantro and enjoy!
