Ranch Style Beans

You'll Need:

  • 8 strips thick cut bacon

  • 1 sweet onion, diced

  • 1 bell pepper, diced

  • 2 cloves garlic, minced

  • 1 serrano, finely diced

  • Handful of cilantro, rough chopped

  • 2 cans beans, drained (I use pinto and northern white beans)

  • 3 1/2 cups chicken stock

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 2 teaspoons dried oregano

  • 1/4 teaspoon red pepper flakes

To get started:

  • Dice bacon, then fry in a deep, heavy skillet.

  • When crisp, remove bacon from pan, and set aside.

  • Saute onion, bell pepper, garlic, and Serrano in bacon fat.

  • Add in the beans and cilantro and mix well.

  • Slowly pour in the chicken stock, stirring well.

  • Add in seasonings and stir.

  • Bring to boil, then turn heat down to low.

  • Let simmer about one hour, until sauce reduces and thickens. Add bacon and stir. Allow to simmer about 5 minutes.

  • Top with diced onions, bell pepper, cilantro and enjoy!
