Thin Pancakes

I’ve never called them crepes.

Beat together:

  • 8 large eggs

  • 1/3 cup sugar

  • 1 cup milk

  • 1 1/2 cup flour

  • 1 teaspoon (plus an extra splash) vanilla

  • pinch of salt


Pour:

1/3 - 1/2 cup batter into a hot, buttered skillet

Rotate:

pan so batter evenly coats the bottom

Cook:

over medium heat about 90 seconds

Flip:

then cook an additional 30-45 seconds

Remove:

from pan

Top:

with syrup, butter, fruit, jam, chocolate, peanut butter, whipped cream... You name it!
