Turkey Meatball Pasta Skillet
For the Meatballs You'll Need:
1 pound ground turkey
1/4 tsp kosher salt
1/4 tsp fresh cracked black pepper
1/2 teaspoon sage
1/2 teaspoon garlic
1/2 teaspoon rosemary
Couple pinches crushed red pepper
Handful of chopped fresh parsley
1/4 cup panko bread crumbs
1 tablespoon grated shallot
1 egg
Mix:
All ingredients together with your hands in a mixing bowl.
Form mixture into balls.
Spray the bottom of your skillet with cooking spray (or line with parchment)
Place meatballs in skillet
Brush tops with a small amount of olive oil
Pop that into a 400 degree oven for 14-18 minutes (depending on size)
Take that out of the oven, and set meatballs aside.
Now You'll Also Need:
4 pieces bacon, diced
1/2 cup shallot, diced
3 cloves garlic, minced
2 cups zucchini, diced
2 cups yellow squash, diced
1 can cannellini beans, drained and rinsed
2 cups chicken broth
2 cups milk (dairy free? just use 4 cups chicken broth)
2 1/2 cups uncooked macaroni noodles (or whatever pasta you have on hand)
Over Medium Heat:
In the bottom of that same skillet, saute the bacon about 4-5 minutes until golden and starting to crisp.
Remove bacon from skillet and set aside with meatballs.
In the bacon grease in the pan, saute shallot and garlic about 3 minutes.
Add in beans, zucchini and squash. Toss well.
Slowly pour in the chicken broth, scraping bottom of pan while stirring.
Add milk and bring to a simmer.
Once simmering, add in the uncooked macaroni as well as the kale.
Allow to simmer about 4-5 minutes.
Add meatballs and bacon and stir well.
Allow to simmer another 5 minutes or so, stirring occasionally.
Tip: Try it topped with crushed red pepper, parmesan cheese, fresh chopped parsley.
