BrusselsKraut does not have to be fermented for days/weeks. It doesn't require any special equipment or ingredients. And packs all the sauerkraut flavor that you love into each bite while taking UNDER 1 HOUR from start to finish.

Yes. I'm serious. Not a typo.

You'll Need:

  • 1 lb (about 5 cups) brussels sprouts, thinly sliced

  • 1 sweet onion, thinly sliced (I cut my onion in quarters and then slice thinly from there.)

  • 5 garlic cloves, minced

  • 1 carrot, grated

  • 1 tablespoon butter or olive oil

  • 1 1/4 cup vegetable broth

  • 3/4 cup apple cider vinegar

  • 1 teaspoon peppercorns

  • 3 bay leaves

In a large saucepan:

  • Heat butter or oil over medium

  • Toss in brussels, onion, garlic, and carrots.

  • Stir well to coat

  • Cook about three minutes until onions begin to soften

Now add:

  • Vegetable broth, acv, peppercorns, and bay leaves.

  • Stir well.

  • Bring to a simmer.


Simmer:

  • Over medium for 40 minutes

  • Stir occasionally

  • Remove from heat

  • Remove bay leaves from pan

  • And that's all there is to it!
