One Pot Caprese Pasta

You'll Need:

  • 1 - 16 ounce package of pasta (I used thin spaghetti noodles)

  • 1 1/2 cup cherry tomatoes

  • 1/2 cup sliced onion

  • 2 heaping tablespoons chopped parsley

  • 2 heaping tablespoons chopped basil

  • 1 1/2 tablespoons olive oil

  • 1 teaspoon balsamic vinegar

  • 4 cups vegetable broth

  • 1/4 teaspoon crushed red pepper

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon heavy cream

  • 1/4 cup fresh grated mozzarella


You'll Need:

Pour:

Pasta, tomatoes, onion, parsley, basil, olive oil, vinegar, broth, red pepper, salt and pepper into a large pot

Bring to a boil

Cover:

Simmer 3 minutes

Uncover:

Simmer 18 minutes more, stirring occasionally

Most of the liquid should be absorbed

Pour:

Heavy cream

Mix well

Add cheese

Stir

Top with fresh shredded parmesan cheese

Serve immediately
