One Pot Caprese Pasta
You'll Need:
1 - 16 ounce package of pasta (I used thin spaghetti noodles)
1 1/2 cup cherry tomatoes
1/2 cup sliced onion
2 heaping tablespoons chopped parsley
2 heaping tablespoons chopped basil
1 1/2 tablespoons olive oil
1 teaspoon balsamic vinegar
4 cups vegetable broth
1/4 teaspoon crushed red pepper
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon heavy cream
1/4 cup fresh grated mozzarella
You'll Need:

Pour:
Pasta, tomatoes, onion, parsley, basil, olive oil, vinegar, broth, red pepper, salt and pepper into a large pot
Bring to a boil
Cover:
Simmer 3 minutes
Uncover:
Simmer 18 minutes more, stirring occasionally
Most of the liquid should be absorbed
Pour:
Heavy cream
Mix well
Add cheese
Stir
Top with fresh shredded parmesan cheese
Serve immediately
