Shrimp Carbonara
You'll Need:
4 pieces of bacon, diced
1/2 lb shrimp
1/2 tsp each: dried basil, oregano, rosemary
Salt & pepper to taste
Pinch crushed red pepper
1 tsp olive oil
1 tablespoon butter
2 tablespoons cream cheese
3 garlic cloves, minced
1/2 pkg spaghetti noodles, cooked to package directions
1/3 cup reserved pasta water
1 egg + 1 egg yolk
1/3 cup half & half
2/3 cup grated parmesan
Cook pasta:
According to package directions
When done, save 1/3 cup pasta water
In a small bowl:
Mix peeled, deveined shrimp, dried seasonings, salt and pepper, red pepper and olive oil
Set aside
In a second small bowl:
Mix egg, egg yolk and half & half
Set aside
In a deep heavy skillet:
Fry bacon
When crisp, remove bacon from skillet and set on paper towel lined plate
Leave drippings in pan
Add:
Seasoned shrimp to bacon drippings
Fry until cooked through, about 4-6 minutes
When pink, remove from skillet and set aside with bacon
Melt:
Butter and cream cheese in the same skillet without rinsing or wiping out
Add in minced garlic, and saute about 2 minutes
Pour:
Cooked pasta in pan and mix well
Add reserved pasta water, shrimp and bacon
Stir
Remove:
Pan from heat and slowly pour in parmesan cheese stirring well
Now pour in egg and half&half mixture
Mix well while creamy sauce forms
Serve immediately
