Classic Chicken Salad
I could eat it every day.
You’ll Need:
3 cups cooked, shredded chicken
1 onion, diced
1/2 cup celery, diced
2/3 cup mayonnaise
1 tablespoon Dijon Mustard (if you like regular yellow mustard… or spicy brown mustard… sub that here)
1 1/2 tablespoon fresh lemon juice (I usually just squeeze half a lemon and use that juice)
1 teaspoon garlic powder
1/4 teaspoon rosemary
1/4 teaspoon thyme
1/4 teaspoon kosher salt
1/2 teaspoon black pepper
Place:
Chicken, onion, and celery in a medium mixing bowl, set aside
Whisk:
All other ingredients together in a small mixing bowl to make the dressing
Spoon:
Dressing over the chicken, onions, and celery
Mix:
Well
Serve:
Right away… oooorrrrrrr… cover and refrigerate and let the flavors marry
Scoop:
On to toasted bread with some lettuce and provolone cheese and top with crushed red pepper
