Bacon Chicken Broccoli Rice
Betcha can’t guess what goes in it.
Also: It’s a one pan meal and that’s basically what I live for.
You'll Need:
3 cups boneless, skinless chicken breast-diced
1 1/2 teaspoon each: garlic powder & onion powder
1/8 teaspoon cumin (just a pinch)
2 teaspoons stone ground dijon mustard
1 tablespoon olive oil
4 strips thick cut bacon, diced
2 cups Minute Rice + 2 cups water
2 tablespoons butter
1 cup panko bread crumbs + 1 teaspoon garlic powder
2 tablespoons butter
2 tablespoons flour
2 cups chicken broth
1 cup milk
1 1/3 cup cheddar cheese
1 teaspoon paprika
1/2 teaspoon each: kosher salt & pepper
1 1/4 cup onion, diced
2 cloves garlic, minced
2 cups broccoli, chopped
First:
Marinate chicken.
Mix chicken, onion power, garlic powder, cumin, dijon, and olive oil in large ziplock bag.
Refrigerate overnight.
Grab:
A large braising pan, 1 large bowl and 1 paper towel
Fry:
Bacon in braising pan over medium heat
When crisp, remove bacon from pan and set aside in large bowl
Pour:
Chicken and marinade from ziplock bag into the braiser
Saute in bacon drippings about 6-7 minutes until chicken is cooked through
Pour chicken into the large bowl with the bacon
Return:
Braiser to heat
No need to rinse
Pour in 2 cups of water
Bring to a boil
Now add 2 cups Minute Rice
Cover and set aside for 5 minutes
Pour cooked rice into large bowl with chicken and bacon
Once again:
Return braiser to heat
Melt:
2 tablespoons butter
Add:
Panko bread crumbs + garlic powder
Toss to coat in butter
Toast until golden
Remove from heat and pour panko onto paper towel
Return braiser to heat
Melt:
2 tablespoons butter + 2 tablespoons flour together
Cook together about 4 minutes, whisking constantly
Slowly pour in 2 cups chicken broth, whisking constantly
Slowly add milk, whisking constantly
Bring to a simmer and allow to simmer and thicken about 4 minutes
Stir occasionally
Whisk:
In 1 cup cheddar cheese, paprika and salt&pepper
Then:
Add onion, garlic, broccoli, and contents of large bowl
Stir well
Sprinkle:
Remaining cheddar cheese, plus toasted panko on top
Pop:
The whole braiser into a 350F oven for 30 minutes
