Greek Summer Salad
The tzatziki is amazing on its own.
You’ll Need:
1 cucumber, thinly sliced
1 red onion, julienned
1 cup cherry tomatoes, halved
1 can garbanzo beans, drained and rinsed
For the Tzatziki Dressing:
1 cup plain Greek yogurt
1 cucumber, grated
1 clove garlic, minced
Juice + zest of half a lemon
1 teaspoon fresh dill, chopped
1/4 tsp kosher salt
Mix:
Sliced cucumber, onion, cherry tomatoes, and garbanzo beans, set aside
Place:
Grated cucumber into a paper towel
Squeeze:
Excess water out
Place:
Into a small mixing bowl
Add:
Greek yogurt, minced garlic, lemon juice and zest, dill, and kosher salt
Mix:
Until well combine
Toss:
Cucumber, onion, tomato and garbanzo beans in the tzatziki dressing
Garnish:
With lemon zest and fresh dill
