Holiday Mashed Potatoes

I might be a potato addict and these are to blame.

You'll Need:

  • 2 1/2 pounds russet potatoes, peeled and cut into large chunks

  • 2 cups chicken stock + water to cover potatoes in pot

  • 1/2 cup butter

  • 1/2 stick cream cheese (4 ounces)

  • 1/4 cup heavy cream

  • 1/3 cup half and half

  • 1 teaspoon salt

  • 1/2 teaspoon white pepper

  • Melted butter + parsley (for garnish)


Dump:

Potatoes into a large pot

Add in 2 cups chicken stock, plus enough water to cover the potatoes

Bring potatoes to a boil


Simmer:

Potatoes over medium heat for about 20 minutes

Or until fork tender


Remove:

Potatoes from heat and drain

Return to pan and place on stove over low heat


Slowly:

Using a potato masher begin to mash potatoes

Add in butter and cream cheese diced into cubes

And slowly pour in cream and half & half

Then add in salt and pepper

While constantly mashing over low heat


Transfer:

Mashed potatoes to a serving bowl

Pour melted butter over top

And sprinkle fresh chopped parsley
