Holiday Turkey Meatballs

Super simple, super delicious, and super beautiful. Alright... let's make some meatballs!
For the Meatballs:
You'll Need:
1 pound ground turkey
1/4 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/2 teaspoon dried rosemary
1/2 teaspoon garlic
1/2 teaspoon rubbed sage
1/2 teaspoon paprika
pinch of crushed red pepper
1 tablespoon fresh parsley, chopped
1 tablespoon shallot, grated
1/4 cup gluten free panko breadcrumbs
1 egg
Mix:
Turkey, salt, pepper, rosemary, garlic, sage, red pepper, parsley, shallot and breadcrumbs together in a mixing bowl
(It works best to use your hands.)
Make a well:
In the turkey mixture
And add the egg
Mix well using your hands again
Shape:
Meat into balls
Place on a parchment lined baking sheet
Brush:
Meatballs with olive oil
Pop:
Baking sheet into a 400F oven for about 14-18 minutes
(Depending on size)
Remove from oven and top with GF Gravy!
For the Gravy:
You'll Need:
1/4 cup butter (dairy free is okay! Earth's Balance is my favorite!)
1/2 teaspoon garlic, grated
1 teaspoon grated shallot
1/4 teaspoon rubbed sage
1/4 teaspoon dried thyme
1 teaspoon finely chopped parsley
1/4 teaspoon cracked black pepper
2 cups chicken stock
1/4 cup gluten free "all purpose" flour (I use Bob's Red Mill 1 to 1)
Melt:
Butter in the bottom of a small saucepan over low heat
Add:
All seasonings, mix well
In a separate bowl...
Whisk:
COLD chicken stock and flour until no clumps remain
VERY SLOWLY:
Whisk chicken stock and flour mixture to butter and seasonings
Bring Heat:
To medium
Bring gravy to a simmer while constantly whisking (This helps prevent clumps)
Simmer:
Gravy about 6 minutes, whisking occasionally
Serve:
Over turkey meatballs and mashed potatoes or cauliflower
