Lemony Tortellini Salad

In A Large Bowl, Mix:

  • 1 cup arugula

  • 1 cup fresh peas

  • 1/4 lb prosciutto, chopped

  • 18 ounces of your favorite frozen or fresh tortellini pasta, cooked to package directions, rinsed and cooled

  • zest of one lemon


For The Dressing, Whisk:

  • 1/3 cup olive oil

  • 1/3 cup lemon juice

  • 1 tablespoon dijon mustard

  • 1 tablespoon spicy brown mustard

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon salt

  • 1 tablespoon chopped fresh rosemary


Drizzle dressing over ingredients and mix well. Cover and refrigerate until ready to eat! If you like a creamier dressing versus a light one, try adding 1/3 cup mayonnaise + 1 additional tablespoon dijon mustard. Enjoy!
