Lemony Tortellini Salad
In A Large Bowl, Mix:
1 cup arugula
1 cup fresh peas
1/4 lb prosciutto, chopped
18 ounces of your favorite frozen or fresh tortellini pasta, cooked to package directions, rinsed and cooled
zest of one lemon
For The Dressing, Whisk:
1/3 cup olive oil
1/3 cup lemon juice
1 tablespoon dijon mustard
1 tablespoon spicy brown mustard
1/2 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon chopped fresh rosemary
Drizzle dressing over ingredients and mix well. Cover and refrigerate until ready to eat! If you like a creamier dressing versus a light one, try adding 1/3 cup mayonnaise + 1 additional tablespoon dijon mustard. Enjoy!
