Slow-Cooker Tortellini Soup
You'll Need:
1 pound hot Italian chicken sausage
1 cup sweet onion, diced
1 cup celery, diced
4 cloves garlic, minced
3 cups fresh spinach, chopped
1 - 12 oz package dried three cheese tortellini
3/4 cup crushed tomatoes
1 tablespoon cornstarch
6 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon rosemary
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper
Brown:
Chicken sausage in a skillet, drain fat
-If Freezing:
Whisk together: crushed tomatoes, cornstarch, chicken broth and all dried seasonings
Pour: cooked chicken sausage, onion, celery, garlic, spinach into a gallon sized ziptop bag.
Next: pour in whisked liquid ingredients
Seal: bag and lay flat
Pour: dried tortellini into small zip-top bag. Either staple to gallon sized or slide into bag.
Freeze.
When ready to cook: remove from freezer the night before you plan to cook
Continue with slow cooker instructions as follow-
Pour:
All ingredients except tortellini into slow cooker and cover
Turn:
Heat to low and cook 6-8 hours

Heat to high and cook 4-6 hours
Pour:
Tortellini into crock pot during last 30 minutes of cooking
Stir well to combine
