Mashed Cauliflower

It’s like… really, really good.

You'll Need:

  • 6 cups cauliflower, chopped

  • 2 1/2 cups chicken stock

  • 2 cloves garlic, smashed

  • 3 tablespoons butter

  • 2 tablespoons heavy cream

  • 1 clove garlic, grated

  • 2 tablespoons shallot, grated

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon cracked pepper + extra for garnish

  • Chopped chives


Steam:

Cauliflower and whole garlic cloves in chicken stock for about 15 minutes until fork tender

--Don't have a steamer basket? No worries, just use a large stock pot, put the cauliflower & garlic in, cover with chicken broth, and simmer with the lid on, stirring every few minutes. The cauliflower will fall apart a bit more, and absorb a little more liquid, but that's 100% okay because we are going to be mashing it!--


Drain:

Chicken broth from cauliflower, reserving 1/4 cup


Pour:

Cooked cauliflower, reserved chicken broth, butter, cream, grated garlic, shallot, kosher salt and pepper into a food processor and pulse until smooth


--If you have an immersion blender, just add everything to your cooking pot and blend away!--


Scoop:

Cauliflower into a serving bowl, top with chives & cracked pepper
