Chicken Sausage + Sauteed Kale

It’s easy on calories but big on flavor.

This chicken sausage and sautéed kale comes together in under 15 minutes, and the flavors taste like it took all day. The simplicity of this dish is where it shines, and its naturally gluten free and dairy free. You can have all the holiday flavor without the holiday calories, and bring a side to the table without worrying about common allergens.

You'll Need:

  • 1 pound chicken sausage, casings removed

  • 1 teaspoon olive oil

  • 1 shallot, finely diced

  • 1 bundle (about 5 cups) kale, chopped

  • 1/4 teaspoon crushed red pepper flakes

  • 2 tablespoons chicken stock


Fry:

Chicken sausage over medium heat in large, deep skillet


Remove:

From pan when cooked through and set aside


Heat:

Olive oil in skillet

Brown shallot (about 3 minutes)

Toss in kale, crushed red pepper, chicken stock, and sausage


Cook:

Until kale turns bright green and begins to wilt (About 4 minutes)


Serve:

Immediately
