Southwest Quinoa Bake

You'll Need:

  • 1 1/2 lbs ground turkey

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon salt

  • 1/4 teaspoon cumin

  • 1/2 teaspoon oregano

  • 1/2 teaspoon garlic powder

  • 1 teaspoon chili powder

  • 1 tablespoon olive oil

  • 1 sweet onion, diced

  • 2 bell peppers (any color), diced

  • 1 serrano pepper, seeded and finely diced

  • 3 garlic cloves, minced

  • 1 can green chilis

  • 1 chipotle pepper in adobo sauce, finely chopped (not a whole can! Just one pepper from the can!) + 2 teaspoons sauce

  • Juice of 1 lime

  • 1 teaspoon oregano

  • 1 tablespoon chopped cilantro

  • 1 cup crushed tomatoes

  • 2 cups chicken broth

  • 3 cups cooked quinoa

  • Salt and Pepper to taste

  • Corn Tortillas


Mix:

Uncooked ground turkey with salt, pepper, cumin, chili powder, garlic powder, and oregano


Brown:

Turkey in a heavy bottomed skillet over medium high heat

Drain fat

Remove turkey and set aside


Heat:

Olive oil in same skillet, toss in onions, bell peppers, serrano, and garlic

Cook about 3 minutes

Add green chilis


In a separate bowl whisk together:

Chipotle pepper + sauce, lime juice, oregano, cilantro, crushed tomatoes, chicken broth


To Skillet Add:

Cooked Quinoa, cooked turkey and mixed liquid

Stir well to combine all ingredients

Add salt and pepper to taste


In 2 greased pie plates:

Layer corn tortillas on bottom

Pour half quinoa mixture evenly over tortillas

Layer corn tortillas again

Pour remaining mixture over top

Top with diced cherry tomatoes, extra bell peppers, etc.


If Freezing:

Cover with foil and freeze now. Remove from freezer when ready to cook. Continue with the following steps. If cooking from frozen, be sure to add about 15-20 minutes of covered cooking time to recipe!


Pop:

Into a 350F oven, covered, for 15 minutes

Uncover and bake an additional 10-15 minutes
