Tuscan Egg Breakfast Cups

You'll Need:

  • 6 eggs

  • 1/4 cup milk

  • 1 1/2 cups chopped spinach

  • 1 red bell pepper

  • 3 garlic cloves

  • 1/3 cup freshly grated mozzarella cheese

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper


Whisk:

Eggs in a mixing bowl until fluffy

Add in milk and whisk well


Dump in:

All other ingredients

Whisk well


Scoop:

By 1/2 cup into a greased muffin tin


Bake:

15-18 minutes at 350F


If freezing:

Remove from oven, allow to cool. Place in a gallon zip-top bag, squeeze out excess air and freeze. To reheat, wrap in paper towel and microwave for 30 seconds.
